Recipe: White Radish With Spare Ribs Soup 白萝卜排骨汤

White Radish, also known as Daikon to many, is a very versatile root vegetable.

You could pickle it, stew it, fry it, saute it, cook soup with it and even make a (carrot) cake out of it!

I used to hate it whenever Mum cooks this soup as I would always mistake the smell for a gas leak only to realise it's coming from the Radish!

As I grew up, I began to appreciate this humble root more when I knew how beneficial it is.

- Dissolves phlegm
- Reinforces energy
- Clears stuffy nose
- Dissolves gall stones
- Regulates metabolism
- Improves blood circulation

Ingredients A:
1 White Radish (peeled and sliced)
1 cup Soybeans
Spare Ribs 250gm (blanched in boiling water)

Ingredients B:
(All to be soaked in water till softened. Retain the liquid to be added into the soup)
6 Red Dates (红枣)
2 Dried Honey Dates (蜜枣)
1 tbsp Wolfberries/Goji (枸杞)
3 pcs Dried Scallop/Conpoy (瑶柱)
Optional:
1 pcs Dried Octopus (cut into strips)

Method:
1) Boil a pot of water (1.8L)
2) Add Ingredients A
3) Add Ingredients B except Wolfberries/Goji
4) Allow to boil, then reduce fire to simmer for 4 hours
5) Add Wolfberries/Goji ten minutes before serving
6) Serves 4
Note:
  • Avoid White Radish if you are on medication as the root would absorb/neutralise the medicinal properties.
